Gastric mucin is a glycoprotein with natural antibiotic function. Gastric mucin against Helicobacter pylori infection. Gastric mucin effectively scavenges hydroxyl radical. Gastric mucin play a major role in the protection of the gastrointestinal tract from acid, proteases, pathogenic microorganisms, and mechanical trauma[1][2][3].

Gastric mucin 可能参与了幽门螺杆菌引起的胃黏膜损伤导致胃炎、消化性溃疡甚至胃癌的机制[1]。
Gastric mucin 根据其组织化学特性分为两类。第一种是表面粘液细胞型粘蛋白，由表面粘液细胞分泌。第二种存在于粘膜的较深部分，由腺体粘液细胞分泌，包括颈粘液细胞、心肌腺细胞和幽门腺细胞。Gastric mucin 中独特的 O-聚糖起到天然抗生素的作用，保护宿主免受 H. pylori 感染[2]。
Gastric mucin 可以通过清除管腔内产生的氧化剂来保护胃肠道表面上皮细胞；然而，这样做是以牺牲其粘弹性为代价的。天然的和经链霉蛋白酶处理的粘蛋白均能有效清除羟基自由基，并且清除特性没有显著差异。对于天然粘蛋白和链霉蛋白酶处理的粘蛋白，丙二醛产量减少 50% 所需的粘蛋白有效浓度为 10 mg/mL[3]。
